Sweet and Sour Mackerel recipe

Everyone loves the flavours of sweet and sour, so try this dish next time you fancy a taste of the Orient.


  • 4 mackerel fillets, skinned and boned
  • 50g flour
  • Oil
  • 2 tsp. soy sauce
  • 3 tbsp. tomato sauce
  • 1 tbsp. rice vinegar
  • 1 tsp. fish sauce
  • 2 tbsp. vegetable oil
  • 1 tsp. corn-flour
  • 1 red chilli
  • 1 onion
  • 2 garlic cloves
  • Thumb-sized piece of ginger
  • 300g pineapple
  • 3 or 4 spring onions

Method of Preparation:

  1. Chop the onion into half-moons and thinly slice the chilli. Mince the garlic cloves. Chop the pineapple into one inch chunks and finely chop the chilli. Shred the spring onions.

  2. Mix the soy sauce, ketchup, rice vinegar and fish sauce with 100ml water. Stir until combined.

  3. Toss the fish with the flour and set to one side.

  4. Heat a bit of oil in a pan until hot and add the onion, garlic and ginger. Stir fry for 30 seconds, then turn the heat down and add the sauce. Add the pineapple chunks and the sliced chilli and then cook for a few minutes, until the pineapple is soft and the sauce is hot. Mix the corn-flour with a tbsp. of water and combine with the sauce, then season well with black pepper. Cook this until thickened.

  5. Fry the fish for three or four minutes on either side.

  6. Serve the dish with the sauce spooned into a bowl with the fish on top. Scatter it with the spring onions.

Try adding a few finely chopped red peppers to the sauce for a bit of sweetness. This will serve four people.
