Spiced Mackerel recipe

Mackerel is a full-bodied, well-flavoured fish with lots of meaty flavour, making it perfect for serving with spices. The simple yoghurt sauce is the perfect accompaniment, too.

Ingredients:

  • 6 medium mackerel, cleaned, gutted, scaled and patted dry
  • 4 tbsp. curry paste - red Thai curry paste is especially good
  • Juice of 3 whole lemons
  • 3 tbsp. olive oil
  • Small handful freshly chopped coriander
  • 125ml yoghurt
  • 125ml double cream
  • Handful freshly chopped coriander

Method of Preparation:

  1. Cut out 6 foil rectangles, around 65x30cm. Slash 4-5 cuts into each side of each fish.

  2. Combine the curry paste, juice of 1 lemon and oil. Rub into the fish and into the slashes. Place each fish onto 1 rectangle of foil, squeeze over the remaining lemon juice and top with a little coriander.

  3. Fold the foil up and seal around the edges to form a pocket, then bake the fish in a 180C oven for 20 minutes until cooked and flaking.

  4. Combine yoghurt, double cream and coriander in a bowl and spoon over the fish to serve.

If you like, sprinkle the fish with paprika, or add a little to the sauce for extra colour and flavour. Recipe serves 6.

The cream/yoghurt mixture was a bit rich, I think just a cucumber yoghurt would be better. I served with rice and salad. Very tasty.
