Salted Mackerel recipe

Salting fish really helps to bring out the delicious flavours. Salting works especially well with mackerel, and although a fair amount of salt is used, you rinse most of it off so there is no need to worry about your sodium intake.


  • 4 small mackerel, gutted, scaled and boned if desired
  • 16 tbsp. coarse sea salt
  • 4 tsp. coarse sea salt
  • Black pepper
  • Lemon wedges to serve

Method of Preparation:

  1. Sprinkle each side of each fish with 2 tbsp. coarse sea salt. Leave to sit for 30 minutes, then rinse and pat each fish fillet dry.

  2. Cover the tails and fins of the fish with foil to prevent them from burning. Sprinkle each fish with 1 tsp. salt and a pinch of pepper. Cook under a hot grill for 3-4 minutes until the skin is crisp and the fish flaking.

  3. Serve with lemon wedges.

If you like, add a little chilli powder or dried chilli flakes to the salt when salting the fish for some extra heat. Recipe serves 4.
