Tomato, Basil and Mackerel Salad recipe

This hearty salad is full of colour and flavour. Feel free to add any vegetables that you may have in the fridge.


  • 3 large tomatoes
  • 1 small red onion
  • Handful fresh basil
  • 150g mackerel fillet, skinned and boned
  • 1 garlic clove
  • 1 tbsp. balsamic vinegar
  • 3 tbsp. olive oil
  • Salt and pepper
  • Handful fresh spinach leaves
  • Handful fresh rocket leaves

Method of Preparation:

  1. Slice the tomatoes thinly and slice the red onion into thin half-moons. Roughly chop some of the basil and leave the rest whole.

  2. Mince the garlic clove.

  3. Whisk together the balsamic, olive oil, garlic clove, chopped basil and salt and pepper.

  4. Arrange the spinach and rocket leaves on a plate and adorn with the tomato, onion, mackerel and basil.

  5. Drizzle the garlic dressing over the top.

This would also be really tasty with a few ripped up balls of buffalo mozzarella. This salad will serve two people.
