Mackerel Risotto recipe

This comforting risotto dish is perfect for dinner parties and those chilly evenings.


  • 250g risotto rice
  • 1 onion
  • 250g smoked mackerel
  • 1 litre vegetable stock
  • 100ml white wine
  • 100g spinach
  • 1 tbsp. butter
  • 100g grated parmesan cheese

Method of Preparation:

  1. Finely chop the onion.

  2. Heat the butter in a large pan until melted and foamy. Add the onion and stir to coat and allow it to soften for about five minutes.

  3. Stir in the rice and cook it for a couple of minutes.

  4. Break up the mackerel with your fingers and stir it into the rice. Add the spinach and stir again, stir through the parmesan cheese and then serve it immediately.

This would be tasty with four or five stalks or asparagus, too. This recipe will serve four people.
