Poached Eggs with Mackerel recipe

This is a lovely, simple breakfast dish.


  • 1 mackerel fillet
  • 2 free range eggs
  • 1 large white roll
  • Salt and pepper
  • Olive oil
  • Water
  • Vinegar

Method of Preparation:

  1. Mix together some water with a few tbsp. of vinegar. Bring the water to the boil.

  2. Fry the mackerel in a pan until flaking, around 4 minutes on each side.

  3. Whilst the mackerel is cooking, vigorously whisk the water until a whirlpool forms. Crack the eggs into a bowl and then drop the eggs into the water, one at a time, and cook them for three minutes.

  4. Toast the roll under the grill or in a toaster.

  5. Assemble the dish by placing the mackerel on top of the toast and garnishing with the poached eggs.

  6. Season well with salt and pepper and a drizzle of olive oil.

This is a really simple dish but the flavours are wonderful. For extra indulgence, try some hollandaise sauce. This makes enough for one person.
