Mackerel with Rice Noodles recipe

In this simple and delicious dinner, rice noodles are tossed with flaked smoked mackerel, garlic, ginger, soy sauce and some vegetables. It takes just 15 minutes to prepare, making it an excellent midweek meal.


  • 250g rice noodles
  • 4 smoked mackerel fillets, peppered and flaked
  • 1 small bunch of spring onions
  • Handful fresh coriander
  • 1/2 cucumber
  • 1 thumb-sized piece root ginger, peeled
  • 2 garlic cloves
  • 4 tbsp. soy sauce
  • 3 tbsp. sesame oil

Method of Preparation:

  1. Remove the outer dark green leaves and roots from the spring onions. Thinly slice. Finely chop the coriander. Slice the cucumber in half lengthways then thinly slice each half.

  2. Mince the garlic and ginger. Whisk the soy sauce, sesame oil, garlic and ginger together. Put the noodles into a bowl and cover with boiling water. Leave to sit for 5 minutes, then drain.

  3. Combine the noodles, mackerel, spring onions, coriander and cucumber in a bowl. Add the dressing and toss to coat.

If you like, add a freshly chopped red chilli to the dressing for a bit of bite and extra flavour. Recipe serves 4.
