Mackerel in Paper recipe

This is a really simple way of cooking mackerel. Serve this with homemade chips for a tasty meal.


  • 4 mackerel fillets, skinned and boned
  • 2 tomatoes
  • 1 lemon
  • 4 knobs butter
  • Salt and pepper
  • 4 sprigs parsley
  • Olive oil

Method of Preparation:

  1. Lay out four squares of foil or greaseproof paper.

  2. Slice the tomatoes into thin slices and slice the lemon into thin slices.

  3. Lay a fish fillet onto each square of paper and then arrange the tomato and lemon on top of each fillet in alternate slices.

  4. Put a sprig of parsley onto each fillet, season with salt and pepper and then drizzle with olive oil.

  5. Seal the parcels by crimping the paper around the edges of the fish. Put them on a baking tray and bake them at 180C for 12 minutes.

You could alternate the tomato for red onion slices for a bigger punch of flavour. This recipe serves four people.
