Quick Mackerel and Apple Salad recipe

This simple recipe is simple to prepare and even easier to eat. A few lovely ingredients are combined in this dish, perfect for picnics, lunches or dinner. Serve with some wholemeal rolls and butter.


  • 350g smoked mackerel fillets, boned and skinned
  • 3 hard-boiled eggs
  • 200g bag mixed salad leaves
  • 4 tsp. lemon juice
  • 6 tbsp. salad cream
  • Salt and pepper

Method of Preparation:

  1. Flake the mackerel into a bowl. Chop the eggs and add to the mackerel.

  2. Peel, core and dice the apple. Toss with 2 tsp lemon juice and add to the bowl. Add salad leaves, salad cream and salt and pepper.

  3. Toss to coat the ingredients in the salad cream.

Add some cucumber or diced cherry tomatoes to pad this salad out a little bit. Recipe serves 2.
