Leek and Mackerel Bake recipe

This bake is full of flavour and is pretty quick to make, too.

Ingredients:

  • 175g penne pasta
  • 2 leeks
  • 200ml pot crème fraiche
  • 2 small mackerel fillets
  • 25g breadcrumbs
  • Knob of butter
  • Salt and pepper

Method of Preparation:

  1. Finely chop the leeks and break the mackerel fillets up.

  2. Heat the butter in a pan until foamy. Add the leeks and cook them for 15 to 20 minutes or until soft and sweet.

  3. Meanwhile, bring the pasta to the boil and cook it for 7-10 minutes or according to packet instructions. Drain it.

  4. Mix the pasta with the leeks, crème fraiche, mackerel fillets and some salt and pepper. Sprinkle with the breadcrumbs and grill until golden and crispy.

Try adding a few handfuls of cheddar cheese into this dish to make it more decadent. This bake will serve two people.
