Mackerel with Grilled Ratatouille recipe

This mackerel dish is incredibly healthy yet full of flavour.

Ingredients:

  • 4 smoked mackerel fillets, skinned and boned
  • 1 aubergine
  • 1 courgette
  • 2 red peppers
  • 2 large tomatoes
  • Juice of one lemon
  • Olive oil
  • Salt and pepper
  • Handful fresh rocket leaves

Method of Preparation:

  1. Cut the peppers in half and remove the seeds and white pith. Cut them in half again. Cut the courgette and aubergine into slices. Slice the tomatoes into thick slices.

  2. Heat a griddle pan. Brush the vegetables with olive oil. Grill them for two minutes on each side or until tender. The tomatoes will need about a minute on each side and they will stick a little bit.

  3. Break the mackerel fillets up with your hands.

  4. Once cooked, toss them in a bowl along with the mackerel, rocket leaves, lemon juice, 4 tbsp. olive oil and salt and pepper.
