Grilled Herb Mackerel with Salsa Verde recipe

Try this tasty dish next time you have a dinner party to really wow your guests.


  • 4 mackerel, boned, scaled, head and tail removed, fins removed
  • 4 sprigs rosemary
  • Olive oil
  • Handful fresh parsley
  • 150ml olive oil
  • The white of one hard-boiled egg
  • 1 tsp. capers
  • 2 tsp. English mustard
  • 2 anchovy fillets
  • Pepper
  • 4 bay leaves

Method of Preparation:

  1. Slice into each mackerel to create a cavity in the fish.

  2. Poke a bay leaf and a stick of rosemary into each cavity along with a little bit of olive oil.

  3. Season the outside of the fish with salt and pepper and rub olive oil into the flesh.

  4. Cook the fish on a grill pan for 4 minutes on each side.

  5. Meanwhile, make the salsa verde by placing the parsley, white of the egg, capers, mustard, anchovy fillets and a pinch of pepper in a food processor. Slowly pour in the 150ml of oil to the food processor and blend until everything is combined, but coarsely so.

  6. Serve the salsa verde spooned over the fish.

This recipe serves enough for four people. Some people make their salsa verde differently, and it just depends on where you get your recipes from. Feel free to adapt the above to reflect your tastes.
