Mackerel Fishcakes recipe

Fishcakes are a great dish for all the family. Try these fishcakes with a little bit of homemade hollandaise for a tasty dinner.

  • 300g cold mashed potato
  • 3 or 4 spring onions
  • 250g mackerel fillets, skinned and boned
  • 85g dried breadcrumbs
  • 1 egg
  • 1 tbsp. horseradish cream
  • 2 tbsp. flour
  • Oil to fry
  • Salt and pepper

Method of Preparation:

  1. Flake the mackerel fillets into a bowl along with the mashed potato. Snip the spring onions into the mixture and add the horseradish cream and some salt and pepper.

  2. Shape the mixture into eight patties.

  3. Set out the egg, the flour and the breadcrumbs in three separate bowls.

  4. Dip the fishcakes first into the flour, then the egg and then the breadcrumbs.

  5. Heat some oil in a pan and fry the fishcakes for a few minutes on each side until golden brown and crispy.

A handful of sweetcorn or a small finely chopped red onion added to this mixture would also be delicious. This recipe will serve four people.
