Fennel and Mackerel Salad recipe

Fennel is marinated in a mixture of lemon juice, salt and pepper before being served with smoked mackerel and dill. If you like, serve with melba toast or pitta triangles.


  • 250g smoked mackerel fillets, boned and skinned
  • 250g baby fennel
  • 1 tsp. freshly chopped fennel leaves
  • Salt and pepper
  • Juice of 1/2 a lemon
  • 3 tbsp. extra-virgin olive oil

Method of Preparation:

  1. Thinly slice the fennel. Toss in a bowl with the fennel leaves, salt, pepper and lemon juice. Leave to marinate for 5-10 minutes.

  2. Divide the fennel between three plates. Flake the mackerel fillets and add to the plates, then drizzle with olive oil.

This recipe would be equally delicious served with smoked salmon instead of smoked mackerel. Recipe serves 3.
