Mackerel with Cauliflower and Caper Salad recipe

Cauliflower doesn't have to be boring - in this dish, it is tossed with capers, mint and garlic and a light lemon dressing, before being topped with some delicious grilled mackerel. Perfect as a dinner party starter.


  • 4 small mackerel fillets
  • 300g cauliflower florets
  • 4 tsp. capers, drained
  • 2 small garlic cloves
  • Small handful freshly chopped mint
  • Small handful freshly chopped parsley
  • 1 lemon
  • 2 tbsp. extra virgin olive oil
  • Salt and pepper

Method of Preparation:

  1. Bring a pot of salted water to the boil. Add the cauliflower and cook for 4-5 minutes until tender. Meanwhile, make the dressing and heat the grill.

  2. Mince the garlic cloves. Zest the lemon and juice half of it. Cut the other half into wedges. Combine capers, garlic, mint, parsley, juice and zest of half the lemon, olive oil and seasoning in a bowl. When the cauliflower has cooked, drain well and then add to the dressing. Toss to coat.

  3. Season the mackerel and sprinkle over the remaining lemon zest. Put on a baking tray and grill for 2-3 minutes on either side until cooked through and flaking. Serve with lemon wedges on top of the cauliflower salad.

If you prefer, use a different vegetable other than cauliflower - you could even do this with cooked potatoes or parsnips. Recipe serves 2.
