Mackerel and Beetroot Salad recipe

These flavours work brilliantly together to make this healthy yet pretty substantial salad.

Ingredients:

  • 3 smoked mackerel fillets
  • 450g new potatoes
  • 50g walnuts
  • 100g spinach and rocket leaves
  • 2 sticks celery
  • 250g cooked beetroot
  • 2 tbsp. balsamic vinegar
  • 1 tsp. grainy mustard
  • 6 tbsp. extra virgin olive oil
  • Salt and pepper

Method of Preparation:

  1. Roughly chop the potatoes and place them into a pan of cold water. Bring them to the boil and cook them for 12-15 minutes or until tender. Meanwhile, prepare the other ingredients.

  2. Finely chop the celery sticks and roughly chop the walnuts.

  3. Whisk together the oil, balsamic, mustard and some salt and pepper in a large bowl. Tip in the warm potatoes and then flake in the mackerel.

  4. Add the leaves, walnuts, celery and beetroot and toss everything together.

A really tasty addition to this salad would be 50g crumbled Stilton cheese. This salad will serve four people.

Very tasty but looked like a dogs dinner. No directions were given as to how to present the beetroot, I cut it into 1". A good way to eat ingredients that do you good, I'll have to come up with a way to present it more attractively.
